I want to teach people the correct way to make pastries, keto or not. My channel is more like a cooking show (how to) with Pastry shop quality desserts rather than just quick fast recipes. I want my recipes that I give to you to come out as perfect as if I made them for you, and to do that I give step by step instruction and helpful tips along the way, to ensure that the recipe comes out perfect. I also let you know the reasons I choose the ingredients I do for the recipe, which will better help you to understand what each ingredient does in a pastry and sometime substitutes for that ingredient.

I never really liked the texture of almond flour baked goods where the tiny bits get stuck in your teeth 😂. These are very yummy. I also use bake believe chocolate chips because they're similar to Lily's and cost less.
I am the same with almond flour. I have a whole playlist with 108 no almond flour recipes, lol. Pretty much don't use it at all anymore. Glad you enjoyed them! I use mostly bake believe now too since they are cheaper and at walmart regularly.

What would you recommend I do if the dough is sticky to my rolling pin or falling apart when I'm rolling it out? Is this an issue with the liquid content or xanthan gum isn't as strong as yours... should I try substituting this for psyllium husk?
I would only add the ice water until it just comes together. You don't want it sticky at all. Probably just an issue with the liquid content. If you are too sticky I would dust with bamboo or oat fiber.

I recently found your channel and watched the vanilla wafer recipe. I only had chocolate protein powder (keto chow, actually) so I omitted the stevia and most of the vanilla and they turned out quite tasty. They didn't spread but were more like little domed lovelies. I also appreciate that you don't use almond flour, because after doing low carb for over a year, I've discovered that the vast majority of recipes I've found use that and I'd rather not because of oxalates. Now I want to try your chocolate chip cookie recipe from this video and use Irish cream powder since that's what I have on hand.
What can be used instead of stevia?
Hi Alycia thank you for this video I was wondering if it would work with Bamboo Fibre. May I ask please what is the ratio. amounts you use for making the larger loaf for your store . I have brought some large tins like yours and preferr a larger slice also . Thank you so much for helping us all . I gave up on the egg white protein bread because it was either yuk tasting or like so choking when tried to swallow . By adding the extra allulose and yeast has made such a difference . You're welcome! I just usually make a 6x batch but make 5 loaves out of it. I put an extra 90g of batter into each pan. So its 1 and 1/5 batch per loaf. I also make buns and such so I always make at least a 2x batch and will make a big loaf then buns or breadsticks with the extra. Glad you enjoy my recipe! Thanks for the comment!
Is the structure strong enough to add maybe flax meal etc.?
People have added all sorts of things to the bread batter. I would just stay away from too many wet things.

I made some chocolate croissants (the rectangle shaped ones) in a live along with a chicken pot pie with it. Never tried the croissant shape but if you do you need it a bit thicker to get the layers in it.

I have a sweet tooth for desserts and been trying to do keto as much as possible. Your recipes look so good! Yiur mock apple pie with chokos will be great at Thanksgiving. Chokos grow in Australia as well so they can be found. I think at one time years ago McDonalds was using them in their pies until people complained. Too bad because they are low in carbs. Anyway! Well my cookies weren’t crispy but flavor was good. my oven even baked quicker with 2min to spare but were already more brown then yours but that didn’t even get them crispy. I will still eat them but I was so hoping they were as crispy as the real thing. My fail not yours ❤
Just read your other comment, sorry I didn't get back to you. Would have said I think powdered would keep it soft like my shortbread cookie recipe. The granular melts and helps get them crispy!

Hi Alycia,how about using coconut flour since it also absorbs lots of liquid? I dont stomach psyllium husk well so wondering if coconut flour might be a goud substitute 😊
Problem with coconut flour is it browns very quick as well. So with the allulose I'm not sure if it would brown too much before the bread is done. I think the bamboo would work in a higher amount, gonna be trying more experiments.
I will have try this one, love how much time you take to explain. You are an amazing teacher and so easy to follow, coming up with great Keto recopies is not easy and you do it perfectly!

Can you use this bread to make stuffing?
I tried one Thanksgiving but it never got mushy like stuffing is, no matter how much liquid. It just doesn't absorb it.

I have made this type of bread many times and its hit of miss as to the results of what you get once the bread bakes. Its also a lot of work. I proof my bread in the Microwave. I will put a cup of water in there to heat it. Once the water is heat, I then put the bread in there, and the microwave retain the heat with the door is close. Great for proofing.
Yeah I've got it down after a few years. I think the weather plays a part in the final outcome also. Glad that proof8ng method works for you.

I posted a few days ago about your pudding…my comment seems to have been deleted, but I wanted to come back to update it. I made the instant pudding (because I am lazy) a few days ago. I used Ghirardelli cocoa, and the flavor was delicious. When I posted before, I thought the pudding was not going to set, but in the end it did after 24 hours, although it was a bit soft. The texture was still creamy, though, and my husband and I enjoyed it. Part of what happened, I think, is that I was interrupted while making it and my gelatin jelled up pretty well. I stirred vigorously to work it through, but that may have resulted in its not jelling up quickly. I used grass fed beef gelatin. If I were, say, to increase the gelatin by 1 teaspoons, would I need to use more water than what the recipe currently calls for? Is an extra teaspoon way too much? When I tried it after about 3 hours last time, it was pretty runny, but it may be because I messed up while letting the gelatin bloom.
That's weird, I didn't delete any comments. I'm guessing it was just because of stiring it after the gelatin was gelled. But if you do want to increase I'd only do 1/4 tsp. more.

Alycia, I think you have too much Allulose in your bread, and that's why two things are happening: it's darkening too much and it's pooling on the bottom. I use two tablespoons in my bread, and it comes out a beautiful shade of light brown. Did you give this a try?
She doesn't just add it for the browning, but it also holds moisture in the loaf to make it less "choky" for her.

The extra allulose does make a much softer loaf and make the bread less choky feeling and it's what my customers are use to. I tried a bunch of different amounts when I first tested the bread.

I love your egg white bread, that is my go to when I make loaf bread. Not sure I’ll try bamboo fiber in yours, I don’t want to alter your recipe. Although I do use a bamboo “flour” mixture as a replacement for wheat flour and things turn out fairly well. And your desserts are fantastic!! Thank you for all you do. ❤

I've heard people have added caraway seeds to the batter. You can add some ground at the end to get more flavor throughout.
